Amanvari Reshuffled the Costa Palmas Dinner Week. Here's Which Room Is Open on Which Night.

"Amanvari establishes a new benchmark for hospitality on Baja's East Cape," Aman Group chairman and CEO Vlad Doronin said when the resort opened inside Costa Palmas this summer. Sleeper reported the opening on August 4, 2026. The property has 18 standalone casitas, a short list of Aman-branded residences, and three dinner rooms.

The opening quote got the coverage. The posted hours matter more for anyone who eats dinner inside the gate several nights a week. Aman never opens all three of Amanvari's dinner rooms on the same night. One of its rooms is a Japanese counter, and it keeps the same five nights as the omakase at the Four Seasons' El Puesto. In Costa Palmas this season, the day of the week decides your dinner options about as much as the cuisine does.

Two Rooms Open, One Dark

Aman's dining page posts these dinner hours. Arva, the Italian room, serves Friday through Tuesday from 5 to 10 p.m. Sesui, the Japanese room, serves Wednesday through Sunday on the same hours. Luma, the shoreline restaurant built around open-fire Mexican coastal cooking, serves dinner Monday through Thursday from 5 to 10 p.m. It also serves breakfast from 7 to 11 a.m. and lunch from 11:30 a.m. to 5 p.m.

Put those three schedules side by side and they settle into three pairs:

  • Monday and Tuesday: Arva and Luma
  • Wednesday and Thursday: Sesui and Luma
  • Friday, Saturday and Sunday: Arva and Sesui

Every night of the week, exactly two Amanvari dinner rooms are open. Each room takes its turn off, so a regular who eats there on Tuesdays will never find Sesui open, and a Saturday regular will never get dinner at Luma. The Lounge Bar serves dinner from 5 p.m. to midnight. That makes it the latest-running room at the resort and a fixed point in the rotation.

Sesui is the room in the rotation that changes the most for the rest of the community.

Two Omakase Counters, the Same Five Nights

According to Sleeper, Sesui pairs a 10-seat omakase counter with an intimate dining room that serves à la carte. It serves dinner Wednesday through Sunday.

Before Amanvari opened, El Puesto at Four Seasons Resort Los Cabos at Costa Palmas was the community's omakase counter. Its evening service is a 90-minute omakase built around locally caught and Japanese seafood. The Four Seasons describes it as a 10-course sequence presented by the resident sushi chef. It runs Wednesday through Sunday, with seatings at 6 and 8 p.m.

That's the same Wednesday-to-Sunday window Sesui keeps. Costa Palmas now has two Japanese counters, and both serve on the same five nights and go dark on the same two. Each run is a small room. Sesui's counter has 10 seats, and El Puesto's omakase runs two fixed seatings a night. On Monday and Tuesday, the posted schedules show no omakase service anywhere in the community.

El Puesto also serves lunch daily from 11 a.m. to 5 p.m., so you can still get raw fish early in the week. It just won't come as a counter dinner.

Monday and Tuesday Belong to Fire and Pasta

Early in the week, the only Amanvari rooms open for dinner are Arva and Luma. The Four Seasons fills in around them with rooms whose posted hours don't split by day.

  • Estiatorio Milos lists breakfast from 7 to 11:30 a.m., dinner from 5 to 10 p.m., and its lounge from 5 to 11:30 p.m.
  • Casa de Brasa lists lunch from 11:30 a.m. to 5 p.m. and dinner from 6 to 10 p.m.
  • Zest seats a single reservation each night at 7 p.m., for up to 12 guests, and serves a nine-course seasonal tasting. The Four Seasons lists it from USD 385 per person.

Zest has the tightest limit of any table in the community. One party gets the room each night, so on any given evening it books exactly once. A 2025 Four Seasons dining announcement already described Zest as newly introduced, so this winter is at least its second.

Arva's Monday and Tuesday nights cover Italian at Amanvari. Starting this week, Nancy Silverton's Mozza Baja in Marina Village covers it too.

The Week, Night by Night

The grid shows the regular weekly schedule. This week, Mozza Baja stays closed on Monday, October 5 and Tuesday, October 6, and its first dinner back is Wednesday, October 7. Milos, Casa de Brasa, Zest and the Amanvari Lounge Bar post dinner hours without naming specific days, so they're left out of the grid.

Delphine keeps the same Wednesday-to-Sunday pattern as both omakase counters. The Four Seasons lists it from noon to 6 p.m. on those days, with last seating at 4:30 p.m. and reservations required. The water taxi and house car service run from 11:45 a.m. to 7 p.m. The Four Seasons' May 2026 summer announcement described Delphine as in its third season. Monday and Tuesday are the quiet days for the beach club, for the Japanese counters, and for Sesui.

Marina Village Reopens This Week

Two Marina Village venues have been closed since early September, and both come back this week. Mozza Baja was scheduled to close from September 2 through October 6, 2026, and reopens Wednesday, October 7. Once it's open, dinner runs every night from 5:30 to 10:30 p.m. The kitchen closes at 9:30 p.m., and the bar takes last call at 10:30. Mozza Pronto serves lunch Monday through Friday from 9 a.m. to 5 p.m. The water taxi to Mozza runs from 8:15 a.m. to 10:15 p.m.

Chiki is closed from September 3 through October 7, 2026. Its regular schedule is Thursday through Saturday, 9 p.m. to midnight, with a live DJ on Saturday nights. October 7 falls on a Wednesday, so the first night Chiki's posted schedule lines up with is Thursday, October 8. On Thursday, Friday and Saturday nights, Chiki and the Amanvari Lounge Bar are the two places in the community posting hours until midnight.

Casena, also in Marina Village, is listed daily from 7:30 a.m. to 5 p.m.

What the Posted Pages Leave Open

None of the official pages say whether someone who isn't a hotel guest can book a table. That covers a Costa Palmas homeowner or a Costa Palmas Club member as much as anyone. Aman's dining page lists hours and contact details. It gives no eligibility rule, no dress code, no prices, no Sesui seating times, and no hours for the Amanvari beach club. The Four Seasons and Costa Palmas pages each publish a booking route for their venues, but none of them state who is eligible to book. The clearest statement about resident access comes from the Delphine launch post in 2024, which said "As a resident or guest staying on the Costa Palmas property, you'll have access to Delphine beginning June 2024." That wording is two seasons old, so check it with Concierge before relying on it.

The Four Seasons pages for El Puesto, Casa de Brasa, Zest and Milos all recommend refined resort attire at dinner. The Costa Palmas resort page for Aman still reads "Opening: 2026." That line was written before the August opening and hasn't been updated.

Into November and the Holidays

The Costa Palmas Club calendar schedules La Carrera for Thursday, November 5 through Sunday, November 8. It combines golf on the Robert Trent Jones II course with yachting and evenings in Marina Village. The calendar doesn't say whether the event is open to all homeowners or only to Club members, and the October Ladies Wellness Weekend is still waiting on confirmed dates.

The Four Seasons holiday pages give a first look at the season, and each page marks its 2026 program as still to be confirmed. The Thanksgiving page lists a buffet at Estiatorio Milos, a Turkey Trot and a piano soirée with Marcello De Vita. The Christmas page lists a Mexican Posada and tree lighting on December 24. The New Year page lists a plated gala and a countdown soirée on December 31. Thanksgiving falls on a Thursday, when Sesui and Luma are Amanvari's two posted dinner rooms. December 24 is a Thursday this year as well. December 31 is a Thursday too, so all three holidays land in the same slot of the rotation.
